Quinoa with lemony roasted veggies and cashew cream

When asked how I am inspired to cook a new dish most of the times the answer is that my fridge gives me the answer. Depending on what I have on hand I improvise. Yesterday I opened my fridge and saw some portobello and peppers waiting patiently to be cooked. Then I asked my husband what he would like to have for dinner and he answered «quinoa». So taht was it! I came up with the idea of roasting veggies and pairing them with quinoa. All of that topped with a refreshing cashew cream. (perfect also spread on rusks/bread). This is a very filling, healthy and tasteful meal. We really enjoyed it. Keeps well in the fridge.

Ingredients (serves 3):
fro the veggies
300 gr. portobello mushrooms, chopped
10 long green peppers, chopped
150 gr. white radish (daikon), sliced
3 scallions, finely chopped
4 Tbsp wild fennel, finely chopped
3 Tbsp olive oil
juice +zest of+ 1/2 lemon
salt and lemon pepper

for the quinoa:
1 1/2 cup quinoa
2 scallions, finely chopped
2 garlic cloves, minced
2 Tbsp wild fennel, finely chopped
1 Tbsp olive oil
salt and lemon pepper

for the cashews cream
100 gr. raw cashews, soaked in water for 2 hours
1 garlic clove
2 Tbsp olive oil
3 Tbsp lemon juice +zest of 1/2 lemon
2 Tbsp wild fennel, finely chopped
salt and lemon pepper
8 Tbsp water

Instructions:
Place veggies on a baking sheet lined with parchment paper. Season with salt and pepper. Add lemon zest, juice and olive oil. Toss until well coated. Cook in preheated oven at 200C for 35 minutes.
In the meantime rinse quinoa thoroughly. Cook in 3 cups of boiling water along with scallion, garlic and fennel. Season with salt and pepper. Lower heat and let cook until water is absorbed. In the end add olive oil.
In a blender pulse all the cream ingredients until smooth.
Serve quinoa, top with veggies and cashew cream. Enjoy!
