Hello, people! Lately I have been trying to find ideas for a new kind of breakfast. I love my overnight oats or my rustic bread with homemade jam or honey, but I think that variety is a way to stave off nutritional boredom. So this time I tried something new: I used my dear quinoa in a sweet recipe and the result was really satisfying. A delicious vegan filling bowl made of quinoa, milk, banana, topped with many yummy goodies. This is a breakfast that will give you energy for many hours and will make your day! As you see in the second picture I met some obstacles while shooting. My dog always gives me a hard time when I take pics of the recipes I make! She is really greedy! Food blogging is not an easy thing after all!

1/2 cup quinoa
1 cup soy milk
1/2 banana, mashed
1 Tbsp shredded coconut
2 Tbsp maple syrup or honey (for non vegans)
1 tsp chocolate tahini
topings: walnuts, banana slices, cocoa nibs, coconut flakes
Cook quinoa according to package instructions. In the same saucepan pour milk, tahini, maple syrup, shredded coconut and banana. Stir and let come to a boil. The result will be thick, so if you would like it thinner, just add some more milk. Serve and top with goodies of choice. Enjoy!
