Good morning, dear friends!I am sure you have already noticed that I am a huge quinoa fan. I have cooked it in so many ways and I just love the fact that it is so versatile! I have mostly used it in savoury recipes. The only sweet quinoa recipes are this quinoa breakfast bowl and these chocolate quinoa brownies. So today we are making apple muffins with spices and raisins and of course quinoa! They make a fantastic snack or breakfast for you and your kids! Do try them and I am sure you will enjoy them as much as we did!

Ingredients (yields 8-9 muffins):
3/4 cup whole wheat flour
1 cup quinoa Biosophy, cooked
1/4 cup coconut sugar Biosophy
1/4 cup sunflower oil
1 big apple, grated
1 tsp baking powder
1/4 tsp ginger, cinnamon, clove powder
1/4 cup raisins
In a bowl combine flour with baking powder and spices. In another bowl whisk sunflower oil with sugar, apple and quinoa. Combine the dry ingredients into the wet ones. Fold in raisins. Put batter into the silikon muffin cases. Combine all the topping ingredients and sprinkle them over the muffins. Bake in preheated oven at 180C fro about 30-40 minutes. Remove from the oven, allow to cool on a rack. Enjoy!
