My whole family goes crazy for pasta! I love easy, simple, recipes that can be made really quickly like this one: a yummy pesto sauce made with purslane. I have already told you how healthy purslane is and we have used it in these salads: purslane salad with strawberry goji berries dressing ,my all green salad and purslane fresh goji berries salad.

100gr. purslane leaves
175gr. spicy garviera (greek gryere)
2,5 big garlic clove
10 Tbsp olive oil
salt and pepper
Cook fusili according to package instructions. In a blender pulse purslane, basil, garlic, walnuts and cheese until smooth. Add olive oil and pulse again. Season with salt and pepper. Add 2-3 Tbsp of the water in which fusili were cooked in. Drain pasta and fold in the sauce. Enjoy!
