Purslane fresh goji berry salad

My dear father in law brought me a bunch of purslane the other day. I immediately decided to make a salad with it. Purslane is considered a weed in the USA but in Europe it is eaten as a leaf vegetable. It is packed with nutrients and is best known for its very high content in omega-3 fatty acids. So give purslane a chance!

Ingredients:
1 bunch of purslane
1 Tbsp white sesame seeds
1 Tbsp black sesame seeds
3 Tbsp fresh goji berries
10 almonds, coarsely chopped
3 Tbps olive oil
1 tsp maple syrup (or honey for non vegans)
2 Tbsp lemon juice
salt

Instructions:
Place chopped purslane on a plate along with goji berries. In a small bowl combine olive oil with honey, lemon juice and salt. Pour dressing over the salad, mix. Sprinkle with sesame seeds and top with almonds. Enjoy!
