When we went for dinner at our favorite restaurant in Zakynthos («Aperitto») this summer, we ordered a delicious dish made with mushrooms in tomato sauce topped with smoked cheese. We really enjoyed it. So when I recently saw some mushrooms in my fridge waiting patiently to be cooked, I remembered this great recipe and tried to copy it. This is a filling, flavorful meal that is perfectly paired with potato puree. You could also pair it with rice or pasta.

Ingredients (serves 4):
500 gr. mushrooms, sliced
1onion, finely chopped
3 garlic cloves, minced
4 Tbsp olive oil
500 gr. tomato juice
1/3 cup wine
1 tsp dried mint
1 tsp tarragon
1/2 tsp cinnamon
salt and pepper
150 gr. vegan cheese, grated
Instructions:
In a big pan saute mushrooms along with garlic and onions for a few miutes. Pour wine and stir. When wine is evaporated, add toato puree, dried mint, tarragon, cinnamon. Season with salt and pepper and let simmer. When sauce gets thick, remove from heat. Serve with potato puree and top with cheese. Enjoy!
