As you can tell from previous posts we are huge mushroom fans! So today I will post a recipe with dried porcini mushrooms! I discovered them a few months ago and I admit that I was thrilled by their fine taste and aroma! I used a fine quality wine from Samos that I had won as a prize at the gathering of Greek food bloggers. The result is an easy, quick and flavorful dish:

Ingredients ( it serves2):
500 gr.  Potato gnocchi or pasta
10gr. dried porcini mushrooms
a handful of walnuts or pine nuts
1 small red onion, finely chopped
4-5 parsley springs, finely chopped
1 big cup of good quality white wine
½ cup of evaporated milk (optional)
3 Tbsp olive oil
Salt and pepper
Directions:

In order to reconstitute the porcini soak them in a bowl with wine for 30 minutes and then drain them. Drain the flavorful soaking liquid. In a frying pan pour olive oil, add onion and walnuts and stir for 3-4 minutes at low heat. Add mushrooms and the wine they had been soaked in and let simmer. Season with salt and pepper. You can add milk if you want to get a more creamy sauce. Cook Gnocchi potatoes according to package instructions. When done, add them in the frying pan and combine with the porcini sauce. Sprinkle with parsley.
