Goodmorning, everyone! I have a confession to make! I am in love with quinoa! Lately it seems to be my favorite ingredient, so healthy, so versatile. After the quinoa zucchini frittata, my herbed quinoa pies, my quinoa salads (like this aromatic quinoa salad with garlicky mustard sauce) or my quinoa with roasted veggies and cashew cream, I decided to make a quinoa bake! I paired quinoa with a delicious basil tomato garlicky tomato sauce, topped with cheese and peppers and baked it in the oven. The result was heavenly and reminded us of pizza. I am sure your kids will love quinoa after having this for dinner. This is a tasteful, healthy, easy and quick meal and I bet it will be a hit if you try it!

Ingredients (serves 3-4):
1 1/2 cup quinoa, thoroughly rinsed
500 gr. tomato puree
4 garlic cloves, minced
fresh basil leaves, chopped
4 Tbsp olive oil
salt and pepper
150 gr. melting cheese of choice, grated (vegan)
1/2 green pepper, sliced
In a pot bring 3 cups of salted water to a boil. Add quinoa and let simmer until liquid is absorbed. Remove from heat and set aside. In the meantime in a pot place tomato puree, garlic, basil and let simmer until you have a nice thick sauce. Season with salt and pepper, pour olive oil and remove from heat. Grease a baking dish and spread quinoa. Top with a thick sauce layer. Sprinkle the cheese and garnish with pepper slices. Bake in preheated oven at 200C for about 20 minutes or until the cheese has melted. Allow to cool before serving. Enjoy!
Note: next time I am going to make this dish, I will pour the sauce over the quinoa, stir well and then put quinoa in the baking dish. In this way it will be better coated with the sauce. I suggst you do the same!
