My dear friends, I am really excited to share this recipe with you! It is the first dish I make using exclusively our own veggies! It feels soooo good! My beloved has made my dream come true: to cook with ingredients from my own garden… So today I am presenting you a dish that combines two great loves of mine : veggies and pasta! Briam is a traditional greek summer dish with plenty of veggies. In this version I omitted the potatoes and paired the oven baked veggies with pasta. Great way to use up our garden produce!

Ingredients (serves 4):
500 gr. penne (gf)
6 ripe tomatoes, grated
2 tomatoes, diced
250 gr. tomato puree
4 zucchini
2 green peppers
2 onions
2 eggplants
3 garlic cloves
fresh oregano
salt and pepper
12 Tbsp olive oil

Instructions:
Cut eggplants in slices and soak them in salted water for 30 minutes. Then rinse them and chop them. Chop all the other veggies. Put them in a baking tray, season with salt and pepper, pour olive oil, tomato puree, grated tomato and sprinkle with fresh oregano. Mix well and bake at 200 C until soft. Cook pasta according to package instructions. Drain and combine them with the oven cooked veggies. Serve immediately with freshly ground pepper and top with fresh oregano. Enjoy!
