Good morning, dear friends! Happy October! May it be a month full of joy and deliciousness! This weekend was very important for my family since we partecipated in our first race altogether! Our baby boy was the youngest partecipant (9 months old!) My hubby ran 10 km and my son and I walked 3km. It was really frustrating that there were no other walkers…So sad! Apparently locals do not like walking… But we enjoyed our race a lot! I am looking forward to our running altogether in the future!
Let’s mve n to the recipe now! We are making delicious, healthy and easy to make peanut butter oat bars! No need to bake, no need to wait long until you can devour them. They keep well in the fridge for days and I am sure you and your kids will love them. This is a great wholesome snack, guys! Try it and let me know your impressions!

Ingredients (yields 8 bars):
1 1/2 (135 gr.) oat flakes
1 cup (220 gr.) dates, pitted and soaked in warm water for 1 hour
3/4 cup (85 gr.) peanuts, chopped
1/4 cup (65 gr.) peanut butter
1/4 cup (60 ml) agave syrup
1 1/2 Tbsp cocoa powder
30 gr. vegan chocolate, melted in baine marie
Pulse dates in a blender. Put them in a bowl along with oats and peanuts. Mix until well combined. In a saucepan heat over low heat agave syrup and peanut butter until well combined. Remove fromheat and add cocoa powder. Line a small baking dish with parchment paper and empty the batter. Press with your fingers and even the surface with a spoon. Drizzle with melted chocolate and cover with aluminium foil. Put in the fridge and cut into 8 bars after a couple of hours. Wrap them with aluminium foil and keep them in a container. Enjoy!
