Panzanella: tomato and bread salad

My dear friends, I am so excited to share with you my newest love: my favorite salad for this summer, my version of the italian panzanella. A simple yet really tasteful salad that is based on stale peasant style bread and tomatoes. I just can’t get enough of it and I even have it as a meal. Made with pure veggies from our garden it seems to me that I could live on such a pretty, healthy and delicious salad!

Ingredients for a big salad:
4 ripe tomatoes
4 slices of stale peasant style bread, cut into cubes
1 green pepper, finely chopped
1/2 cucumber, sliced
1 big garlic clove, minced
1 Tbsp caper, rinsed
1 Tbsp vinegar
6 Tbsp olive oil
fresh basil or oregano
salt

Instructions:
In a baking tray place bread cubes and bake for about 20 minutes at 180C. In a large bowl put 3 tomatoes cut in medium pieces, cucumber, caper, garlic, pepper and basil. Add the fourth tomato, grated. Season with salt, pour olive oil and vinegar. Stir well to combine. Finally, add bread cubes. Allow to sit for 20-30 minutes before serving so that the bread absorbs all these wonderful flavors. Enjoy!
