I have always loved mushrooms. I think they are God’s gift to vegetarians! So healthy, so yummy, so versatile! I always try to figure out new ways to enjoy them. The last recipe I made with them made me love them even more! I combined oyster and porcini mushrooms in a red sauce scented with cinnamon and bay leaves and topped them over basmati rice. The result was a hearty, filling meal that made my mouth water. You should definitely try this one!

To κοκκινιστό του χορτοφάγου: Πλευρώτους με μπασμάτι

Ingredients (serves 3):
500 gr. oyster mushrooms, sliced
10 gr. porcini
1/2 cup red wine
250 gr. tomato juice
400 gr. diced tomatoes (1 can)
1 onion, finely chopped
2 garlic cloves, minced
2 bay leaves
1 tsp cinnamon+1 tsp oregano
6 Tbsp olive oil
Salt and pepper

basmati rice or potato puree

Instructions:
Soak porcini in wine for 2 hours. Then finely chop them. Saute onion and garlic for 2 minutes. Add oyster and porcini mushrooms and saute for another 5 minutes. Pour wine and stir. When wine is evaporated add tomato juice and diced tomatoes. Season with salt and pepper, add bay leaves and cinnamon. When liquid is absorbed, remove from heat.Top on basmati rice or potato puree. Enjoy!
