When I was a little girl, Sundays were special days. The whole family would gather around the table and my mum would make roasted meat with potatoes. I can still remember the smell lingering all over the house! When I became a vegetarian, I gave up on my favorite «psito»(=roasted) and missed its smell! Years later I discovered that if you bake mushrooms in the oven you get a similar «aroma»! What a find! This dish has become a staple in our house and is one of our favorites! Portobello mushrooms with potatoes, lots of garlic and rosemary baked in a delicious orange-mustard sauce! No water! They taste heavenly! I highly recommend you give this dish a try! It is absolutely mouthwatering!

500 gr. portobello mushrooms, sliced
800 gr. potatoes, peeled and cut
5 rosemary twigs, chopped
5 garlic cloves, minced
400 gr. fresh orange juice
6 Tbsp olive oil
5 Tbsp mustard
(optional: 1 tsp honey, if not vegan)
salt and pepper
In a bowl combine orange juice with olive oil, mustard, garlic. Season with salt and pepper. Place mushrooms and potatoes in a baking tray and pour over the sauce. Mix until well coated. Add rosemary and bake at 200C for about 1 hour. Enjoy!
