Good morning, dear friends! Happy new year! As you have noticed judging by my sister’s posts we have started the year with many sweet recipes! This year is definitely gonna be sweet! My sweet daughter, Chara, helped me in the making and shooting of these amazing orange almond biscotti! She goes nuts for kneading dough and making cookies! The biscotti were so yummy that were devoured in no time! Easy to make, with simple ingredients, ideal for the whole family. The aroma of cinnamon lingered all over the house. Try them! 1 cup ground almonds
3/4 cup brown sugar
2 cups all purpose flour
½ cup orange juice
1 Tbsp orange zest
2 Tbsp cinnamon powder
Put the brown sugar in a blender and pulse until powdered. Combine ground almonds, powdered brown sugar, cinnamon powder in a mixing bowl. Add orange zest and juice. Stir well until you get a nice dough. Scoop out the dough and shape into a long log. Cut the log into slices of the same size. Place the slices on a parchment lined baking sheet. Bake in preheated oven at 180C for 15-18 minutes. Allow to cool on a rack. Enjoy! You could drizzle with melted chocolate. If you prefer them soft, use self rising flour, shape dough into round cookies and bake for 12-15 minutes.
