An ode to dates : Date squares

As you might have understood by now, I am a huge date fan! I mean the fruit, not dating with guys!!! Dates are the best natural sweetener! They are delicious and can be used in many types of desserts. They are also very healthy since they are packed with nutrients. Either as ingredient in a dessert or as a snack with a couple of almonds they are amazing! I hope you enjoy these squares as much as we did!

Ingredients:

for the crust:

1 cup almonds

1 cup oats
1/2 cup buckwheat flakes
1/2 cup shredded coconut
140gr. dates
1/4 cup coconut oil
1 tsp cacao powder

for the filling
350gr. dates
3/4 cup water
1 tsp vanilla extract
1 tsp cacao powder

Directions:

In a food processor pulse the ingredients of the crust until you get a sticky dough. Lay 3/4 of the crust on a pan lined with parchment paper. Press firmly with your fingersPulse the ingredients of the filling until a paste is formed. Spread it over the crust evenly and top with the 1/4 of the crust. Allow to cool in the fridge overnight. The next day cut into squares and enjoy this healthy sweet treat!
