Goodmorning, my dear friends! The weather is finally getting colder! I like cocooning but on the other hand winter means that we will stop going for swims. Well that’s the blessing you have when you live on an island, right! And Crete is a magical place!
John is a boy who lives next to us and has become a friend of my daughter. The doctor has advised him to refrain from eggs, dairy and veal. He has become my official taste tester! Every time he visits us, he rushes into the kitchen and asks if I have made something new! So I dedicate this sweet treat to this awesome little guy! The concept is based on our sweet salami . Salami or kormos (tree log) is a very popular greek dessert made of chocolate/cocoa powder, cookies, butter and walnuts. It has been named after its shape. Here is a healthified but very delicious version! Hope you enjoy it! Kisses and hugs!
Ingredients (yields 12 slices):
1/2 cup tahini
1 cup oats (gf)
1/2 cup walnuts, coarsely chopped
1/2 cup raisins
120 gr vegan chocolate
1/4 cup goji berries
5 Tbsp agave syrup
zest of half orange
1 Tbsp orange juice
In a double boiler melt 90 gr. chocolate. Add tahini, agave syrup and orange juice. Stir to combine and remove from heat. Fold in oats, walnuts, raisins, the rest of the chocolate (grated), goji berries and orange zest. Give this mixture a salami shape and place it on a parchment paper or aluminum foil. Store in the freezer and allow to freeze overnight. Cut in slices and enjoy the next day!
