I love pies, especially the «naked» ones, that is the ones who require no kneading, no rolling out dough into sheets! I love the easy ones, that can be made quickly and easily without mess! This delicious herbed pie is made with two kinds of greek cheese (feta and manouri), chilopitaki (a traditional kind of greek pasta). This pasta is made from the Greek wheat seed, triticum dicoccum, which is considered to be a very tasty and easily digestible wheat variety. Wheat is ground in a stonemill with stones from the island of Naxos, adding a distinct flavour to the produced flour. 3 Tbsp «Vasilakis Estate» extra virgin olive oil
1 1/2cup white button mushrooms
1/4 cup fresh mint
1/2 cup water
3/4 cup «Trinity Farm» organic wholewheat cut hilopites Dicoccum
1 1/4 cup feta, crumbled
1cup manouri (or more feta), grated
2 Tbsp «Cretan Herbs» organic blend for salads
2 cups «Trinity farm» organic Flour triticum dicocum
Sea salt flakes from Kythira island
100gr. manouri, grated
1 egg + 2Tbsp cream cheese
1/4 cup milk
In a pan saute onion, mushrooms and mint in olive oil. Then add the pasta and the water and stir until liquid is absorbed. Remove from heat. In a bowl combine eggs with yogurt and the pan mixture. Stir to combine. Add feta and manouri, herbs, flour and season with salt and pepper. Stir again until well combined. In a baking dish or pan (25×25) lined with parchment paper empty batter. Top with the rest of manouri, brush with the egg (which you have beaten along with the milk and the cream cheese) and sprinkle with sesame seeds. Bake in preheated oven at 180 C for about 40 minutes. Allow to cool before serving. Enjoy!
