Stifado (that is meat with pearl onions and tomato sauce) is one of my favorite recipes. It reminds me of my childhood since my mum used to cook it often (with rabbit most of the times). But today I will replace the meat with mushrooms. I cooked it last Sunday and it was yummy! Of course it is a lenten and vegetarian dish!
3-4 bay leaves

Peel pearl onions patiently! Heat the oil in a pot, place them inside (if they are big, cut them in 2 or 4) and allow them to sweat. Add bay leaves, tomato juice and paste, cinnamon, clove and let boil. When the onions get soft, add mushrooms and let boil for another 10 to 15 minutes. Try and season with salt and pepper. There was no need to add any water during cooking but beware because you may need to add some. The sauce is ideal for bread dipping…
