 Hello, my dear friends! I am sure that there are times in your life that you want to let steam off, get rid of negativity and nervousness…What do you do then? My way of calming down is always one! I cook! I love to cook when I am tensed and especially specific kinds of food such as risotto, kneading doughs, making cookies etc When I am in my kitchen, magic happens: negativity disappears and in no time I feel much much better!  The risotto I am sharing with you today is made with the amazing online delicatessen Yoleni’s products. Ingredients (serves 2-3):
300 gr. «Agrozimi» mushroom risotto
2 Tbsp «Driskas garlic pulp wih olive oil
3 walnuts, finely chopped
6 Tbsp «Vasilakis Estate» extra virgin olive oil
1 Tbsp «Cretan Herbs» organic blend for salads 
sea salt flakes from Kythira island
3 Tbsp pomengranate

Instructions:

Heat olive oil in a big pan, add garlic pulp and walnuts. Saute for a while. Then add rice and stir until translucent. Pour boiling water or broth laddle by laddle and continue stirring. After 10 minutes season with salt, pepper and organic blend. Cooking time is about 25 minutes. In the beginning you could use some good quality white wine. Remove from heat. Top with pomegranate and extra walnuts (and cheese of choice). Enjoy!
