I love bruschette! They are an awesome appetizer, a great finger food. Here in Greece we usually make them the italian way that is with tomato and cheese. This time I decided to make a totally different bruschetta. I used my pesto hummus and mushrooms and they turned out fantastic! You should try them!

Ingredients (yields 6 bruschette):
1/2 french baguette
6 Tbsp pesto hummus
200 gr. white mushrooms, wiped and thinnly sliced
1 garlic clove, minced
1 Tbsp olive oil
2 Tbsp parsley, finely chopped
salt and pepper
1 Tbsp sesame seeds
Place mushrooms in a non stick pan along with garlic and parsley and allow to cook over medium heat until any humidity is evaporated. Season with salt and pepper and pour oil. Stir. Cut baguette lengthwise and then in 3 pieces. Toast. Put bread on a platter. Spread 1Tbsp hummus on each bruschetta. Top with mushrooms and sesame seeds. Enjoy!
