After the holiday dinners, after cooking many and complicated dishes, let’s make a simple yet very tasty pasta dish made with the excellent products of the online delicatessen Yoleni’s. Papardelle with a variety of fresh and dried mushrooms, scented with rosemary and garlic. Simplicity at its best. A quick and yummy pasta dish that is a crowd pleaser!

Ingredients (serves 3-4):
500 gr. «Andritsena» papardelle
250 gr. white mushrooms
250 gr. portobello mushrooms
150 gr. oyster mushrooms
30γρ «Dirfys» dried chanterelle mushrooms
6κσ «My olive oil» extra virgin olive oil
4 garlic cloves, finely chopped
100 ml wine
a handful of fresh rosemary
«Threpsi» sea salt in flakes
Cretan Herbs green peppercorn (whole)
Soak chanterelle in wine for at least 30 minutes. Cook pasta according to package instructions. Remove the black gills on the underside of the portobello cap by scraping with the edge of a spoon. Slice all mushrooms. Heat olive oil and saute garlic. Add mushrooms and rosemary. Finally add chanterele and wine. Allow to cook for 5 minutes. Stir the cooked papardelle in the mushroom mixture and serve. If you want, top with graviera cheese or walnuts. Enjoy!
