Time really flies…We celebrated our second wedding anniversary yesterday! Everything has happened so fast: I met Kostis almost 3 years ago and then we got married, we had our baby boy and now he is already 7 months old! These years have gone by so quickly! The only thing I ask for is health and a peaceful life! The last bloodsheds that occured in Europe have shocked me and made me worry about my son’s future…So many dark things happen that fill us with fear, indignation, insecurity…All I want is health, serenity and wisdom…

I don’t want to drag you down…I will immediately move on to the recipe! What about making pasta with mushroom minced meat? A vegan, light and mouthwatering dish that will blow your mind! You MUST try this one, guys! If you love mushrooms then this dish calls your name really loud!  I recommend the additional use of porcini to boost the mushroom flavour! A reader of the blog, Giorgos-kun Chopper Zaraggas, told me that he made a tomato version using carrots, zucchini, parika and cinnamon. I guess that one would be yummy too!

Ingredients (serves 3):
500 gr. pasta (I recommend linguini)
500 gr. white mushrooms
10 gr. porcini (optional but recommended)
1/2 cup walnuts
3 garlic cloves
1 onion
5 Tbsp olive oil
salt and pepper
3/4 cup from the water pasta was boiled

Instructions:
Soak porcini in wine/water for at least 2 hours. Then drain and finely chop them. Pulse mushrooms, onion, garlics until ground. Put them in a non sticking pan along with the porcini and cook over medium heat. Stir often and add 2-3 Tbsp of the wine they were soaked, Season with salt and pepper. When liquid is absorbed, pour olive oil, add ground walnuts, stir well and remove from heat. Cook pasta according to package instructions. Before straining them keep one cup of thw water they are boiling in. Pour 3/4 of this into the pan with the dry mushroom sauce so that it gets wet. Stir and toss the linguini into the pan. Stir until well combined. You may have to use the rest 1/4 of the water. Top with parsley and freshly ground pepper and serve immediately. Enjoy!
