White beans soup (fasolada) …ournationaldish! Perfect, delicious, packed with nutrients and tasteful! When I was a little girl and someone would ask me what my favorite dish was, I always said «fasolada of course!». It was really shocking that a little child voted for such a traditional legumes dish and not for french fries and hamburgers!

Our sweet mum adds small pasta tubes in this soup as a  deceased Italian friend of hers, Anna, had advised her to…The addition of pasta makes the soup thicker and besides the combination of legumes and cereals is really healthy!
I know it is a winter dish, but ideal for those who keep a lent and the weather has been kind of naughty these past few days and become cool again! So we can definitely make a nice warm soup! Have a nice Holy Week everybody! Kisses!

Ingredients:

500 gr.white kidney beans
2  big red onions, sliced
3  big carrots, sliced (or grated)
4  big tomatoes, grated
A little tomato juice
½ cup small pasta tubes
Some celery springs
Salt and pepper
Olive oil
Directions:
Soak beans in fresh water overnight. The day after put them in a large pot and let boil for 10 minutes, drain them and put them back in the pot in new, warm water (we do this if we have a sensitive stomach for a lighter result). Add carrots, onions, celery and let boil. When they are soft, add tomatoes. Fifteen minutes before removing from heat, add the pasta, season with salt and pepper and pour olive oil. Mix well and wait until you have a nice, thick soup!
Needless to say it goes perfectly with feta cheese and good quality bread!
