Good morning, friends! Happy fall! September starts with a super yummy sweet treat! Mini vegan ice creams with just 2 or 3 ingredients! It can’t get better than that, can it? I am sure that you will adore these cute little bites! They are so simple and easy to make and I am definitely going to make them for my baby when he gets older! There is a story behind this recipe. My hubby decided to run ultra marathons. So he asked me to make him a snack to nibble during his training and races. It had to be something sweet, yummy, nutritious and rich in carbs. You see when you run such long distances, your energy supplies are depleted and you have to refill them. I thought to combine dates with peanut butter and I made a heavenly cream. Kostis really liked it and was totally satisfied. We put it in a small jar and he eats it during his runs. As a food blogger though I wanted to find a way to present it to you too. I wanted to make it solid without adding any more ingredients. So I came up with a great idea! Why not putting this cream into an ice cube tray and make sweet date ice cubes? I was pretty sure it would work. We have used these ingredients for making ice creams in the past (here and here). And I was right!
I was thrilled with the result! They turned out great! The texture is so silky and by no means can you tell that there are dates in there! You can add cocoa powder if you like. I am sure you will love them!

Ingredients (yields 14 mini ice cream):
1 cup (200 gr.) dates, pitted
1/2 cup (130 gr.) peanut butter
1,5 Tbsp cocoa powder (optional)
Soak dates in hot water for 1-2 hours. Then drain them and pulse them in a blender until you get a nice paste. Add peanut butter and cocoa powder. Pulse again until you get a nice cream. Empty this date cream into an ice cube tray. Cover with aluminium foil and put in the freezer. Be patient for a few hours until the cubes are frozen. Enjoy!
