I have been a vegetarian for 15 years. I am used to being asked some standard questions such as «You don’t eat chicken?», «And how do you manage being a vegetarian? What do you eat? You keep grazing all the time!» (so funny!) or «I bet you have health problems» etc! Of course the answers are that my diet is balanced and based on a variety of foods (take a look at my blog to get what I mean!), I don’t have health problems, I don’t eat chicken because it is an animal you know! My nightmare was to find a husband who would love meat! I prayed to God to send me a companion that would not be a meat fan! I knew that it was unlikely to find a vegetarian because here in Greece unfortunately vegetarianism is not popular…God listened to my prayers and sent me Kostas, a guy who would pleasantly eatmeat before he met me but who now appreciates my cuisine and has rarely meat cravings! This is a real blessing for me since I never cook meat! Thank you, God!
Kostas is a great cook too! He recently came up with the idea of making pies filled with quinoa! What an inspiration! I admit I was jealous of his idea! They turned out amazing! So here you are: enjoy these healthy, yummy babies. I am sure you will love them!

Ingredients for 30 pies:
2 sheets of shortcrust pastry (we used Xrisi Zimi)
1,5 cup quinoa
1 tomato, diced
1 small green pepper, finely chopped
1 medium onion, finely chopped
1/4 cup cashews, coarsely chopped
1 Tbsp olive oil
fennel and basil, finely chopped
salt and pepper
white and black sesame seeds, poppy seeds
milk for coating (I used soy milk)
Thoroughly rinse quinoa. Bring 3 cups of water to a boil and cook quinoa. After a while add onion, tomato and pepper. Few minutes before removing from heat add basil, fennel, olive oil and cashews. Season with salt and pepper. When ready, remove from heat and allow to cool. Roll out the dough and cut into circles. Fill each circle with quinoa. Place pies on a baking tray lined with parchment paper. Brush them with milk and sprinkle with sesame and poppy seeds. Bake in preheated oven at 180C until golden brown. Enjoy!
