Good morning, dear friends! I love summer for many reasons! One of them is the vast variety of fruit and veggies we can enjoy during this season! My baby boy is so lucky that he started eating solid food in summertime! He has eaten so many veggies and fruit! While making him his fruit cream, I thought to myself that I should come up with a fruit dessert! So I made the melon cream I am posting today! It is super easy to make and tastes heavenly! The most refreshing, summery, light dessert! This melon chia cream is my latest addiction and I am sure that you will love it too! I will be waiting for your feedback, guys! Do try it!

Ingredients for 2 jars:
300 gr. melon
3/4 cup (almond) milk
2 1/2 Tbsp chia seeds
2 Tbsp agave/maple syrup
12 mint leaves
Place melon in a blender and pulse until creamy. Add the rest of the ingredients and pulse agian. Empty in two jars and store in the fridge for 12 hours so that it gets thick. If you want a thicker cream, add more melon or reduce the quantity of milk. Enjoy!
Note: you can add finely chopped melon into the jars.
