Hello, my dear friends! Today we are making a super easy and yummy recipe with a strong greek character! Pasta salad with sun dried tomatoes, olives, capers and feta! Can’t get more greek than that, can it? This combo is amazing, refreshing and summery. You can have this dish as salad or as a main. Ingredients for one big salad or two main dishes:
200 gr. «Andritsena» small pasta shells
40 gr. «Spitiki» semi sun dried cherry tomatoes, finely chopped
3 tsp «Driskas» garlic pulp with olive oil
1 Tbsp «Santo» capers, rinsed
8 » Threpsi» Kalamata olives, finely chopped
80 gr. feta, crumbled or vegan cheese
1 small onion, finely chopped
3 Tbsp extra virgin olive oil «Eli»
1 Tbsp balsamic vinegar
1 Tbsp «Terra Ferea» bio oregano bunch
«Cretan Herbs»green peppercorn
lollo verde leaves, chopped
Cook pasta according to package instructions. In a small bowl combine olive oil with balsamic vinegar and garlic pulp. Season with salt and pepper. In a large bowl place cooked pasta and pour over the dressing. Then add cherry tomatoes, olives, capers, lollo verde and onion. Sprinkle with oregano and top with feta crumbles. Enjoy!
