Today we are presenting you another greek producer we met in the greek food festival that took place in Athens almost a month ago. «Ariston» is a company which produces olive oil, infused olive oil, balsamic vinegar, honey, currants. The thing that impressed me the most is the infused olive oils in so many flavors: thyme, rosemary, garlic, chilly, pizza, chocolate(!), orange, blood orange, lemon…this list is endless! They transform salads, pasta dishes with just few drops! The scent is so strong and tasteful. I also loved the balsamic vinegars with fruit: strawberry, rasberry, fig etc. The company has won many international prizes and has made Greece proud of its high quality products the majority of which is exported! You can buy their products online! Ariston means «the very best» and they are worth of this title!
So today we are cooking a recipe inspired by the messinian land: penne scented with blood orange olive oil, with talagani cheese (the messinian equivalent of haloumi) and dries figs marinaded in rasberry balsamic vinegar. A fresh, fruity pasta dish full of flavors and aromas! Take care, my dear friends!
Ingredients (serves 3):
400 gr. penne
100 gr. baby rocket
200 gr. talagani cheese
4 Tbsp pine nuts
4 dried figs, finely chopped
1 garlic clove, minced
1 Tbsp Ariston balsamic vinegar condimenti rasberry
3 Tbsp olive oil
2 Tbsp.Ariston infused olive oil blood orange flavour
3/4 cup of the water penne are boiled in
salt and freshly ground pepper
Mix 3 Tbsp olive oil with 1Tbsp vinegar in a bowl and place garlic and figs. Marinade for a few hours. Bake talagani cut in slices and when cooled, cut in pieces. Set aside. Cook pasta according to package instructions. Keep 3/4 cup of the water they are boiling in. Roast pine nuts and and add figs with their marinade, baby rocket. Stir. Add drained pasta, 2 Tbsp blood orange scented olive oil. Stir to combine. Serve with freshly ground pepper and talagani pieces. Enjoy!
