It has already  been 2 years since I started running. My life is completely changed in so many ways…Running has improved my way of life and has become more than a hobby. I have partecipated in two half marathons and two 10km races and now I have made the great decision: to run a marathon! Running 42 km is not an easy thing to do…It requires discipline, commitment, perseverance, logging many miles, sweating a lot, struggling to survive on the streets! Setting limits and trying to overcome them is the magic of this sport! You have to confront yourself, your fears, your lazy mind that whispers constantly «come on, you are tired, just walk, just give up!» You have to be strong and persistents, ingnore all negative thoughts and say «I will make it to the finish line!»

Let’s move on to our recipe! Today I am sharing with you a recipe that was posted a few days ago on my favorite greek running site «Running news». So we are making a healthy snack literally packed with nutrients that is ideal for recovery after a hard work out. It will give you 14gr. of protein! (serving size=2 truffles) You don’t have to be a runner to make these yummy truffles. It is the perfect snack for school or work.

Ingredients (yields 16):
100 gr. almonds, ground
150 gr. oat bran
4 Tbsp shreeded coconut
8 tsp whey protein
50 gr. chia seeds
20 gr. goji berries, ground
1 tsp cocoa powder
1 ripe banana
100 gr. peanut butter
50 gr. dates +3 Tbsp water
2 Tbsp maple syrup or honey
4 Tbsp soy or almond milk

Instructions:
In a bowl soak dates in warm water for 1/2 hour. Then process them until smooth in a blender along with 3Tbsp of the water they were soaked in. In a large bowl combine almonds, oat bran, whey protein, cocoa powder, shredded coconut, chia seeds, ground goji berries. In a blender pulse banana, dates, almond butter, maple syrup and soy milk until smooth. Add the wet mixture in the dry mixture. Stir until well combined. Shape the dough into balls and refridgerate. Enjoy!
