Good moning, dear friends! A new week starts, a very important week for me , since on Sunday the Athens Marathon will take place in which I hope I will partecipate. I hope we will be able to get to Athens (if you live on an island, transportation depends on weather!) and I also hope that our baby boy will let us sleep for a change the night before the race! I visualize our entrance into the Kallimarmaro stadium after having run 42 km from Marathon to the center of Athens. I hope that everything will be alright and that we will enjoy this glorious race despite all the difficulties we have been through lately (injuries, sleepless nights, exhaustion). God of running, help me run to the finish line safe and sound! Amen!
And now let’s cook people! Stifado is a greek traditional dish made with rabbid or hare, pearl onions cooked in tomato sauce. This vegan version is made with lima beans and it is one of the most delicious legume dishes I have ever had!It is my definition of comfort food, a yummy dish that will make you lick your fingers. And of course it is rich in protein! You should definitely try it!

Ingredients (serves 5):
500 gr. lima beans, soaked overnight
500 gr. tomato juice
15-20 pearl onions
1 Tbsp tomato paste
8 Tbsp olive oil
1 cinnamon stick
4 all spice berries
4 bay leaves
salt and pepper
Soak lima beans in water overnight. Peel pearl onions and soak them in water with some ice cubes overnight too so that they are lighter. Drain lima beans and cook them in boiling water for 10 minutes. Discard this water and put in the pot new warm water. Cook for about 1 hour. In the meantime saute onions in a heated pan with 2 Tbsp olive oil for 3-4 minutes. Set aside. Then add the onions and the spices in the pot. In the end pour tomato juice and paste and allow to cook until you get a nice thick sauce. Before removing from heat season with salt and pepper and pour the rest of the olive oil. Enjoy!
