I am a huge hummus fan! I have tried so many variations and I totally love the taste and versatility of hummus. Lately I discovered that I had never made lentil hummus. So this is how this recipe was born. I added roasted pepper and onion and rosemary to enhance the flavor and I think that it was actually the best hummus I have ever made! I am warning you, it is addictive! I hope you enjoy it as much as we did!

Ingredients (yields 2cups):
200 gr. lentils, uncooked
1 onion, finely chopped
1 yellow pepper, finely chopped
2 rosemary twigs, finely chopped
juice of 1/2 lemon
14 Tbsp water
4 Tbsp olive oil
salt and pepper

Instructipns:
In a baking sheet lined with parchment paper put onion, pepper and rosemary. Pour 1Tbsp olive oil, season with salt and pepper and mix well. Bake in preheated oven at 180C until golden brown. In the meantime cook lentils. When ready, drain them and set aside. In a food processor pulse lentils until smooth. Add roasted veggies, olive oil, lemon juice, water, salt and pepper and pulse until well combined. Serve in bowls. Enjoy!
