Great Lent is the most important fasting season in the church year in Orthodox Christianity which prepares Christians for the greatest feast of the church year, Pascha (Easter). So many Greeks beginning from this Monday refrain from certain foods (mainly animal products). This blog is full of lenten recipes that will satisfy everyone’ s needs! This recipe is ideal for people who fast. A lemony bean soup scented with sage. A warm comfort food, so easy to make, inspired by the fagioli alla toscana.

Λεμονάτη σούπα με φασόλια, φασκόμηλο κ φιστίκι Αιγίνης
Λεμονάτη σούπα με φασόλια, φασκόμηλο κ φιστίκι Αιγίνης

Ingredients (serves 2):
250 gr. white beans
2 garlic cloves, minced
10 fresh sage leaves
juice of 1 small lemon
3 tsp corn flour
5 Tbsp olive oil
2 Tbsp pistachios
salt and pepper

Instructions:
Soak beans in water overnight. Then rinse them, put them in a pot with water and let come to a boil. Discard this water and put them again in the pot with new warm water. Add garlic and sage. When almost cooked, pour olive oil and lemon juice. Season with salt and pepper. In a bowl combine 4-5 Tbsp of the beans broth with corn flour. Pour this mixture into the beans so that the soup thickens. Top with pistachios and freshly ground pepper. Enjoy!
