Lemony roasted asparagus gnocchi

I am in love with asparagus! They are so delicious and it is  a pity that they are not available for many months! Wild asparagus are even tastier than the cultivated ones but they are really hard to find. Today we are making a simple and super tasty dish: lemony fennel scented gnochhi with roasted asparagus. My husbund and I loved this meal so much that we wished we had more servings to enjoy!

Ingredients (serves 2):
500 gr. gnochhi
200 gr. asparagus
1 garlic clove, minced
1 small onion, finely chopped
2 Tbsp walnuts, chopped
1 Tbsp nutritional yeast (optional)
3 Tbsp olive oil
juice and zest of 1/2 lemon
3 Tbsp fennel, finely chopped
salt and pepper

Instructions:
Cut asparagus in 3 and cut the stems lenghtwise. Put them on a baking sheet lined with parchment paper, add garlic, onion,1 Tbsp olive oil and season with salt and pepper. Bake in preheated oven at 180C for about 45 minutes (halfway through cover with aluminium foil). In a bowl combine 2 Tbsp olive oil with lemon juice. Cook gnocchi. When ready put them in a pan, pour lemon mixture. Sprinkle nutritional yeast, fennel, lemon zest and walnuts. Stir to combine. Top with roasted asparagus. Serve right away. Enjoy.
