Hello, everyone! I hope that you are fine and that you are cooking healthy and delicious stuff! Today I am sharing with you an easy, light and amazing salad. Baby spinach with lemony baked mushrooms topped with sesame seeds and pistachios! What a yummy healthy salad is that!

Ingredients:
5 mushrooms, sliced
1/2 green pepper, chopped
1 garlic clove, minced
2 tsp mustard
1 Tbsp olive oil
2 Tbsp lemon juice
1 tsp oregano
salt and pepper

100 gr. baby spinach
2 Tbsp pistachios, coarsely chopped
1 tsp white + 1 tsp black sesame seeds
salt and pepper
2 Tbsp olive oil
1 Tsp lemon juice
grated zest of 1/2 lemon

Instructions:
On a baking sheet lined with parchment paper place mushrooms, pepper, garlic. Combine olive oil, mustard, oregano, salt and pepper and pour over mushrooms. See that they are well coated. Bake in preheated oven at 200C for about 30minutes. Place spinach leaves on a platter, pour olive oil and lemon juice. Top with sesame seeds, pistachios and lemon zest. Enjoy!
