Lemony lima beans with leeks & celery

When I was a student, I lived in Athens and visited often my beloved aunt Despoina. I used to eat at her place quite often as she was a great cook! One of my favorite dishes was lemony cod with leeks and celery. I recently remembered this recipe and how tasty it was. So I decided to make a vegan version of it by skipping the cod and replacing it with lima beans. The result was amazing and turned out a hit in our house. This is a wholesome, filling, lemony, yummy dish that all the fmily will enjoy. In Greece we are used to baking lima beans in red tomato sauce but this is an even better version! In the past I have made one more lemony version of lima beans (I apologise for the bad quality of those pictures, back then I was a bit  inexperienced)

Ingredients (serves 2-3):
250 gr. lima beans
4 leeks, chopped
2 carrots, sliced
3 celery stalks, sliced
1 small onion, finely chopped
juice of 1 lemon
9 Tbsp olive oil
salt and pepper

Cook lima beans in boiling water until they start to get soft. Transfer in a baking dish. Add leeks, carrots, onion, celery. Season with salt and pepper. Pour olive oil and lemon juice. Stir to combine. Pour hot water (about 1,5 glass) and bake in preheated oven at 200C until cooked through. ( Depending on the quality of the beans and on your oven you may need to add more hot water). Serve with good quality bread and enjoy!
