We have already told you how much we both adore pasta. The Veggie Sisters are huge fan of pasta dishes and could live on spaghetti! Ever since I became a long distance runner, I have the greatest alibi to consume big quantities of pasta. You see if you want to run long, you have to do the so called «carboloading» so that you have supplied your body with energy. This is the biggest reward for all the pain, the sweat, the fatigue you undergo each time you hit the pavement and head for a long run…This recipe is an example of a «you deserve it» dish!
And now it is high time I revealed a secret to my dear readers! All this time that I have been blogging, although I have cooked countless pasta dishes, I have posted only a few. The reason for this is that I want to eat them right away when ready. I like them served warm. But I have decided to change that…I feel quilty for not sharing with you all this yummy stuff! So I will make it up to you. From now on I will shoot first and then I will enjoy my meal!
So today we are making an easy, healthy, aromatic pasta dish with few simple ingredients. Lemon+herbs+mustard are a winning combo! The ideal meal for hot summer days!

Ingredients (serves 2):
350 gr. spaghetti
2 garlic cloves
1 bunch of herbs (parsley, mint, fennel, basil)
juice and zest of 1 lemon
4 Tbsp olive oil
2 Tbsp «Kalamata Papadimitriou» mustard with oregano and thyme
salt and pepper
3/4 cup of the water in which pasta was cooked
Cook spaghetti according to package instructions. In a food processor blend garlic with herbs until finely chopped. In a bowl combine lemon juice with mustard, olive oil and water. Season with salt and pepper. Drain pasta and place it in the pot. Pour the sauce and stir to combine. Add the herb mixture. Top with grated lemon zest. Enjoy!
