Lemony briam (Greek veggie bake)

Things in Greece, as you may already know, are tough! Our country is going through a serious crisis and is facing huge financial problems. RIght now capital control is imposed which means that cash machine withdrawals are limited to 60€. It goes without saying that Greeks are afraid of spending money and we are trying to use it as wisely as we can. Cooking with expensive ingredients right now is out of the question, so today we are making a simple, summery dish that is a version of this traditional Greek dish, called briam. Briam is made with a variety of veggies baked in the oven with a thick tomato sauce. This is a tomato-less version. Instead I have used lemon and mustard. It is delicious and filling! Sometimes the simplest things are the best!

Λεμονάτο μπριάμ

Ingredients (serves 3):
5 potatoes
1 zucchini
1 eggplant
1 green pepper
2 portobello mushrooms
1 onion
2 garlic cloves
juice of 1 lemon
9 Tbsp olive oil
mustard
salt and pepper
oregano

Instructions: 
Wash and cut vegetables in big pieces. Place them in a big baking pan. Season with oregano, salt and pepper. Pour olive oil, lemon juice, mustard and 1 glass of water, stir to combine. Bake at 200C for about 1hour. It can be eaten hot or even cold. Enjoy!
