Good morning, lovely people! Here I am with a new post after such a long long time! The truth is I haven’t been cooking a lot lately. On the contrary I run and try to find a new hobby! The weatehr here in Crete is rainy! Before moving here, I had been told that it would be shiny all the time! Bu unfortunately it rains a lot! Anyway Crete is beautiful even when the weather is bad…Let’s cook now a yummy healthy salad packed with nutrients! This aromatic legume wheat salad is filling and delicious! You should try it!

Ingredients (serves 6):
250 gr. lentils
1 cup black eyed peas
1 cup wheat
1/2 cup parsley
6 spring onions
4 roasted red peppers
12 Tbsp olive oil
2 big garlic cloves, minced
juice of 2 lemons

Instructions:
Cook lentils, black eyed peas and wheat seperately. Drain well. Soak raisins in water for 1 hour so they soften. Finely chop sundried tomatoes, parsley, onions and peppers. In a big bowl combine the legumes with the wheat, the chopped veggies and raisins. In a small bowl combine olive oil with lemon juice, garlic, salt and pepper. Pour the dressing over the salad and toss until well coated. It keeps well in the fridge. Actually it tastes even better the other day! Enjoy!
