Today I suggest an easy, delicious and healthy dish, ideal for those who fast.
Ingredients:
5-6 leeks
2 carrots
6 brown mushrooms
3 scallions
1 little cup brown rice
Tomato juice
olive oil
salt, pepper
Ingredients :
I wash the leeks and the scallions. I cut the leeks into big pieces and chop the scallions. I pour someolive oil in  a saucepan and brown the leeks and the scallions. I add the carrots cut in  thin slices, the rice, a glass of water or of vegetable stock, a little cup of tomato juice,  salt and pepper. I let it boil for15 minutes and then I add the mushrooms cut in slices and let boil for another 5 minutes.
The little breads you see in the picture are beer bread with sundried tomatoes and parmesan. I will soon post the recipe although I am quite sure you all know how to make them.
