Today we are making a traditional Greek dessert called Koliva. According to Wikipedia Koliva is boiled wheat which is used liturgically in the Eastern Orthodox Churches. This ritual food most likely was used even before Christianity since the ingredients used have symbolic value relating to the Greek pantheon, though not to Christian iconography. In the Eastern Churches, koliva is blessed during the memorial Divine Liturgy  performed at various intervals after a death; at funerals and during the mnemosyna, i.e. the Orthodox Memorial Services.
I love koliva since they are made with wholesome ingredients and they are really yummy. It is a pity that here in Greece they are consumed only in religious occasions. In the mind of a Greek they are connected with death since they are served after every funeral ceremony. They are packed with nutrients and I make them as a healthy sweet treat!

Ingredients:
500 gr hard wheat husked
3 Tbsp flour
200 gr walnuts, coarsely chopped
200 gr white almonds coarsely chopped
100 gr sesame seeds
2 cups raisins
1/2 cup parsley, finely chopped
2 pomegranates
5 Tbsp cinnamon

Instructions:
Boil the wheat according to package directions (some need soaking). Strain the wheat and rinse very well, leave in colander (boil wheat before  sleeping and  leave it in a colander overnight). Wipe wheat with a towel and spread it on a clean tablecloth. Cover with a kitchen towel and let it dry thoroughly (the time depends on the humidity and how well it had been dried in the colander). When you have thoroughly dried the grain, put in a pan the flour and then stir with a wooden spoon until you get a light brown color. Then add the wheat. Roast sesame seeds to get more intense aromas. Add all remaining ingredients and stir to combine (the amounts of other ingredients may vary according to taste). Serve in bowls and enjoy!
