Kataifi nests filled with mushrooms

Hello, dear friends! Today is a special day and I hope you have a great time with the love of your life! The recipe I am sharing with you today is a simple and yummy appetizer, ideal for a romanti dinner. Shredded fillo dough (kataifi) nests filled with mushrooms and other veggies. I am sure you are gonna love it!

Ingredients (yields 24 nests):
500 gr. shredded fillo dough (Xrisi Zimi)
7 white mushrooms, finely chopped
4 portobello mushrooms, finely chopped
1/2 red pepper, finely chopped
1/2 green pepper, finely chopped
1/2 orange pepper, finely chopped
1 medium onion, finely chopped
8 sundried tomatoes
1/2 fennel bulb, finely chopped
6 Tbsp olive oil
salt and pepper

4 eggs
110ml milk
salt and pepper

50 gr. mastelo cheese

Saute fennel and onion. Add peppers and pine nuts. Then add mushrooms. Finally add sun dried tomatoes, 1/2 glass of water and season with salt and pepper. Remove from heat when liquid is evaporated. Remove a  handful of shredded defrosted dough and loosen by gently pulling strands with both hands working in opposite directions. Beat eggs with milk and season with salt and pepper. Divide dough into 24 parts/nests. (a handful each). Dip each nest  into the milk mixture, squeeze with your hands, lay on a baking sheet lined with parchment paper. Make a well in the middle and fill it with 1 tsp of the veggie mixture. Top with cheese. Bake in preheated oven at 200 C for about 15 minutes. Enjoy!
