Hello, our dear friends! Today I am going to share with you some more ideas for a summer buffet. Homemade breadsticks and biscuits, delicious dips, mini tarts, lemony pasta are my suggestions. I am sure your guests will be impressed. The products used are from the online delicatessen Yoleni’s which gathers the most amazing products from all over Greece and brings you at your doorstep within 16-36 hours (that goes for countries within the eutopean union). Enjoy these simple, yet tasteful finger food with your family and friends!

Ingredients:
Red pepper dip
4 big red peppers, roasted
55 gr. «Hrysafis» wheat rusks
40 gr. walnuts
1,5 tsp «Driskas» garlic pulp with olive oil
1 tsp Sea salt flakes from Kythira island
3 Tbsp «Threpsi» extra virgin olive oil 
1 Tbsp vinegar
1 tsp cumin

Beetroot dip
300 gr. beetroot, cooked
80 gr. feta cheese
3 Tbsp «Threpsi» extra virgin olive oil 
15 fresh mint leaves
Sea salt flakes from Kythira island

½ puff pastry sheet
4 tsp «Goumenisses» pipernies

½ puff pastry sheet
3 tsp «Driskas» garlic pulp with olive oil
3 tsp  «Amvrosia Gourmet» chopped fresh basil in olive oil
2 tsp pine nuts

Mini tarts with potato puree and lentinoula-Mini tarts with tomato marjoram sauce-Biscuits
1 tart dough click here for the recipe
for 8 tarts
8 circles (10cm) cut from the tart dough
320 gr. potatoes, cooked
8 gr. «Dirfys» dried lentinula mushrooms
white wine for soaking mushrooms
80gr. «Asoutis» soft cheese from Andros
1 tsp «Driskas» garlic pulp with olive oil
Sea salt flakes from Kythira island
2 Tbsp «Threpsi» extra virgin olive oil

for 10 mini tarts-pizzas
10 circles (6-7cm) cut from the tart dough
5 tsp «Spitiki» tomato sauce with marjoram
10 «Velouitinos» Throumba Olive from Thassos bio, finely chopped
35gr  «Asoutis» Ladotyri oil cheese from Andros
35gr  «Asoutis» soft cheese from Andros
1/2 green pepper. finely choppedΙδέες για καλοκαιρινό μπουφέ

Lemony pasta (fro 6 shot glasses)
1 cup small sized pasta
Grated zest of lemon
juice of 1 lemon
2,5 Tbsp «Threpsi» extra virgin olive oil 
fresh mint leaves

Instructions:

Red pepper dip
Bake peppers until they get brown from all sides. Cover them with a plastic wrap and let them «sweat» so that they are easily peeled. Blend rusks with walnuts. Set aside. Blend peeled peppers with olive oil, vinegar, salt, garlic pulp, cumin and paprika until smooth. Add the walnut-rusk mixture and blend again.

Beetroot dip
Blend all the ingredients until smooth. Serve with the amazing «Chiotiko kelari»lasagne chips with potatoesΙδέες για καλοκαιρινό μπουφέ

Breadsticks with pepper spread and aubergine spread
Lay puff pastry sheet on a surface and place the pepper spread on the one sheet and the aubergine on the other. Cut with a knife into 1cm width pieces, roll them and place breadsticks on a baking sheet lined with parchment paper. Bake in preheated oven at 200C for 20-25 minutes.Ιδέες για καλοκαιρινό μπουφέ

Mediterranean breadsticks
Lay puff pastry sheet on a surface and spread the garlic pulp, basil, finely chopped sundried tomatoes, pine nuts. Cut with a knife into 1cm width pieces, roll them and place breadsticks on a baking sheet lined with parchment paper. Bake in preheated oven at 200 for 20-25 minutes.

Mini tarts with potato puree and lentinoula
Soak mushrooms in wine for at least 30 minutes. Blend cooked potato with lentinoula, olive oil, salt, garlic pulp and 2 Tbsp of the wine used for soaking. With the bottom of a cup cut 8 circles from the tart dough. Place them in muffin tins shaping them into little baskets. Perforate the dough with a fork, fill with potato puree and top with cheese (10 gr. for each tart). Bake in preheated oven at 200C for 25-30 minutes.

In the center of each circle place 1/2 tsp tomato marjoram sauce, 1 olive, chopped, green pepper and 7 gr. cheese (either soft cheese or grated ladotyri). Lift dough a bit upwards. Bake in preheated oven at 200C for 20 minutes.

Biscuits
If there is dough from the tart left, cut it in differents shapes, perfoarate it with a fork and bake in preheated oven at 180C for 15-20 minutes. Serve with the dips or the tasteful «Dolopia» aubergine salad with smoked tea.Ιδέες για καλοκαιρινό μπουφέ

Lemony pasta
Cook pasta according to package instructions and drain them. Heat olive oil, add pasta, lemon zest and juice, mint and stir well. Serve in shot glasses with small forks.
