Ok, I confess, I am a huge garlic fan! I just adore garlic, this yummy small thing that boosts the flavour of each dish!I use it almost everywhere and I even eat it raw even though it is not good for my stomach! For example I use it in salad dressings or finely chopped on green beans. So you see why I loved today’s recipe: homemade herbed garlic puree! Super easy to make, super yummy to eat! Spread on good quality bread or used to flavour all your dishes I am sure you will love it too!

Ingredients for 1 small bowl:
3 heads of garlic
4 Tbsp olive oil
1 Tbsp lemon or vinegar
fresh rosemary or fresh oregano
salt and pepper
Trim the top off the head of garlic but try to leave it intact. Drizzle each head with 1Tbsp oil and wrap it with aluminium foil along with fresh oregano or rosemary. Bake at 180 for about 30-40 minutes until golden brown. Allow to cool. Press on t he bottom of each clove to push it out. Transfer roasted garlic flesh in a blender, pour 1 Tbsp oil, lemon or vinegar, season with salt and pepper and add the roasted herbs. Pulse until creamy and transfer ina small glass jar. Keep in the fridge. If not used in a few days, cover with olive oil. Enjoy!
