Goodmorning, people! I am excited today because this is my first post from my new home in Heraklion, Crete! (although I cooked this recipe in my friend’s kitchen since our place is not ready yet and we have not moved in). This is an italian recipe, I know you might have been expecting a typical cretan recipe…Don’t worry, there is a lot of more to come! So today we are making delicious homemade gnocchi! I love gnocchi especially when they are homemade. Ok, I admit they are a bit fussy, not difficult to make, but they are tastier than storebought! Most people think gnocchi are a kind of pasta but no, they are not. They are made of potatoes and flour. I am giving you the basice recipe here. You can add eggs, parmesan (if not vegan) or herbs. They are definitely worth trying!

Ingredients (serves 2):
100 gr. all purpose flour
a pinch of salt
Place unpeeled washed potatoes in a pot, cover with water and boil them. When tender, remove from heat and drain them. Allow to cool. Then mash them, season with salt and add flour gradually. Knead and make a soft and slightly sticky dough. You may need more flour depending on the humidity. Then roll into ropes. With a knife slice ropes into 2cm pieces. With a fork indent gnocchi, place them on a flour sprinkled surface and allow to sit for 15 minutes. Cook in boiling salted water. When they reach the surface, scoop them out with a sieve (cooking time is no longer than 1 or 2 minutes) and stir them into a warm sauce of choice. Eat immediately!
We opted for our favourite garlicky tomato basil sauce! Enjoy!
