Dear friends, as we had promised in the previous post, today we are presenting the second part of our «healthified pizza project»! On Monday we posted  a healthy flourless vegan pizza packed with nutrients and from the feedback we received we realised that you liked it a lot! We are really glad about that! This is a more delicate and gourmet version of it with delicious toppings. Spicy red pepper pesto, caramelised fennel, onions and dried mushrooms, cheesy cashew cream, rocket and walnuts make a mouthwatering combo! My husband said that it was one of the tastiest pizzas he had ever had and trust me he has eaten lots of them! Not to mention he is not vegan/vegetarian! Ingredients:
1 batch of our potato oat pizza crust
red pepper pesto
1 fennel, sliced
1 onion, sliced
10 gr. dried mushrooms of choice (I used chanterelles)
1/2 cup red wine
5-6 fresh sage leaves
2 Tbsp olive oil
3 Tbsp walnuts
baby rocket
for the cashew cream:
1/2 cup cashews
1/4 cup waterj
2 Tbsp lemon juice
1 Tbsp olive oil
1/2 tsp garlic powder and oregano
salt and pepper

Instructions:
Soak cashews for hours. Then pulse them in a food processor along with the other cream ingredients until smooth. Keep in the fridge. In a bowl soak mushrooms in wine for 3 hours. In a non sticking pan saute onion, fennel and drained mushrooms for a while. Pour the wine in which mushromms were soaked. When liquid is evaporated and veggies are soft, remove from heat. In the meantime make the pizza crust. Spread a rich layer of red pepper pesto and bake in preheated oven at 180C for 20 minutes. Then top with the veggies, walnuts and cashew cream. Bake for another 10 minutes. Serve with baby rocket leaves. Enjoy!
