Salads are my favorite kind of meal during summer. Hot weather calls for refreshing and light meals. If you want to make your salads more filling, just add a grain of choice such as bulgur, quinoa, millet etc. So here you are: a delicious simple green salad with bulgur and veggies, healthy, easy, quick and yummy! What’s more to ask?

1/2 cup bulgur, soaked for 2 hours in warm water and squeezed dry
1/4 of one red, one green and one orange pepper. finely chopped
1/4 of a fennel bulb +5 radishes, sliced
3 sun dried tomatoes, finely chopped
1 scallion, finely chopped
1 Tbsp sesame seeds
1 Tbsp mustard
2 Tbsp olive oil
1 Tbsp balsamic vinegar
salt and pepper
In a bowl place all veggies and bulgur. Season with salt and pepper. Combine olive oil with mustard and balsamic vinegar. Pour over salad. Mix well. Serve on a platter. Enjoy!
