I love family gatherings. I live away from my home town and whenever my parents or sisters come to visit us, it is a big celebration for us! Good food and family gatherings are a staple, meaning that everyone commits «nutritional sins» in such occasions! So now it is high time we got back on track and have light and healthy meals. The salad I am sharing with you today is absoluely mouthwatering combining different flavors and textures! Baby arugula paired with roasted beet slices and garlicky almond hep seed crumbs. This salad is a crowd pleaser, friends!

Ingredients:
300 gr. beets
1 garlic clove
2 rosemary twigs
1 Tbsp balsamic cream
1 Tbsp olive oil
kosher salt and pepper

200 gr. baby arugula
1 Tbsp balsamic vinegar
2 Tbsp olive oil

1 Tbsp almonds
1 Tbsp hemp seeds (optional)
1 garlic clove
salt and pepper
oregano

Instructions:
Slice beets with a mandolin (or with a very sharp knife) in very thin and equally sized slices. (so that they are equally baked). Put them in a bowl and add garlic, balsamic cream, rosemary, oil. Season with salt and pepper. Mix with your hands so that they are coated. Lay beet slices on a baking sheet lined with parchment paper and bake in preheated oven at 180C until crispy. Allow to cool. In the meantime in a nblender pulse almonds with hemp seeds, garlic, oregano, salt and pepper until ground. Combie arugula with balsamic vinegar and olive oil. Place it on a platter. Top with almond mixture and arrange roasted beet slices. Enjoy!
