Mango and I have been complete strangers for 38 years. My hubby changed that when the other day bought me this tropical fruit and challenged me to make something with it. So I made this fragrant and refreshing green salad with cranberries and cashews. We loved it! According to Wikipedia it is the national fruit of India, Pakistan and the Philippines. In several cultures, its fruit and leaves are ritually used as floral decorations at weddings, public celebrations, and religious ceremonies. Mango has a high nutritional value since it is rich in vitamins C & A and dietary fiber. It is also low in fats and calories. Click this link and you will find out how to peel mango easily!

Ingredients:
1/2 lettuce, chopped
1 medium mango, diced
1 small onion, thinly sliced
fresh mint leaves, finely chopped
2 Tbsp cranberries
1/4 cup cahews, toasted
1 Tbsp sesame seeds
for the dressing:
2 Tbsp olive oil
1 Tbsp grape syrup
2 Tbsp lemon juice
1 Tbsp white vinegar
1 tsp dried mint

Instructions:
In a bowl place all the ingredients of the salad and mix well. In another bowl whisk the ingredients of the dressing and pour over the salad. Stir until well coated. Transfer to a platter and top with sesame seeds! Serve and enjoy!
