Valentine’s day is close. So today we have a wonderful salad ideal for a romantic dinner with your love! It is really easy and quick to make. Tender green leaves with «drunk» dried figs cooked in wine, topped with crunchy pistachios, scented with rosemary. We are talking about a real explosion of flavors here!

tender salad leaves (baby spinach/ arugula, valerian etc)
1 small onion, finely chopped
2 rosemary twigs, finely chopped
2 Tbsp unsalted Aegina pistachios
5 Mousseti dried figs, halved
3 Tbsp ELI extra virgin olive oil
salt and Cretan Herbs green peppercorn
1 cup white wine
Soak figs in wine for 1/2 hour. Then transfer them in a pan along with onion, rosemary, pour them with the wine and allow to cook until wine is evaporated. Turn off heat, sprinkle with pistachios, pour oil and toss. Remove from heat. Place salad leaves in a bowl, season with salt and pepper. Transfer leaves in the pan and stir to combine. Serve in a platter. Sprinkle with rosemary. Enjoy!
