Christmas is really near, so I guess you must be planning the holiday dinner! Last year we gave you a Christmas menu and we are going to do the same this year so that we may inspire you. We begin today with the salad. It is a green salad with roasted butternut squash, walnuts, pomegranate and blue cheese (our vegan friends can skip it or use a vegan cheese). It is a healthy, delicious salad and most of all it is really beautiful. I am sure that your guests will be impressed by this colorful refreshing salad. Ingredients (serves 4):
250 gr. green salad (arugula, lollo verde, butterhead lettuce)
1 small fennel bulb, finely chopped
3 Tbsp pomegranate arils
3 Tbsp walnuts
70 gr. blue cheese
3 Tbsp olive oil
1 Tbsp mustard
2 Tbsp orange juice+ 1 Tbsp orange zest
salt and pepper
300 gr. butternut squash (peeled and diced)
1 small onion, sliced
1 Tbsp olive oil
5 fresh sage leaves
salt and pepper
On a baking sheet lined with parchment paper place butternut squash, sage leaves and onion. Season with salt and pepper, pour oil and toss until well coated. Bake in preheated oven at 180C until cooked and golden brown. In a bowl combine olive oil with orange juice and mustard. Place greens in a large bowl. Add fennel, season with salt and pepper and pour over the dressing. Add butternut squash. Toss until well combined. Transfer the salad to a platter. Top with pomegranate, walnuts, bluecheese crumbles and orange zest. Enjoy!
